The Eatery at Yavapai College, A New Dining Experience Set to Open for Students & The Community on January 16

Yavapai College has announced a new dining experience for students and the community, The Eatery, which will open on Tuesday, January 16. The College invites all students, employees, and the community to join in on this new beacon of conscientious and creative dining, where every bite is a celebration of local flavor and ethical sourcing.

The Eatery, nestled in the vibrant heart of the Yavapai College Prescott Campus in Building 3, will seamlessly marry nutrition, food quality, and sustainability. It will prioritize freshness, flavor, and nutritional value, offering a diverse array of dishes that cater to various dietary preferences and needs and an updated seasonal menu.

The commitment to sustainability is embodied in the menu, where each dish is crafted with precision and passion, showcasing the finest ingredients sourced from local resources. In addition, a focus will be given to food and waste management, energy efficiency, and menu planning, which will create a more environmentally friendly and socially responsible operation.

The culinary team overseeing The Eatery features a group of locally renowned chefs from some of the area’s most esteemed restaurants. Led by Aimee Novak, Director, and Tony Burris, Assistant Director, these chefs bring a wealth of expertise, creativity, and a deep understanding of local flavors to the kitchen.

“We cannot wait to open our doors for the first time in January so that we can showcase this new dining experience,” said Novak. “Pairing local, fresh ingredients with the passion and artistry of our chefs is going to lead to an unbelievable culinary experience for our patrons and we are so excited to get started.”

In addition to the new cuisine, Yavapai College is renovating its current dining layout, updating its seating, and overall optimizing the space to create a comfortable and inviting environment for patrons.

The full menu is still in development, but the chefs gave a sneak peek into some of The Eatery’s staple items. Patrons can expect to see these items below, and much more come January.

Breakfast – featuring an array of traditional breakfast items, as well as omelets, sandwiches, burritos, grits, and more.

Example: Ruff’s Sando – Everything bagel w/ sliced ham, cheddar, fried egg, bacon & garlic mayo

Smoothie Bar – featuring fresh fruit and vegetables and add-ins like whey protein, flax seeds, chia seeds, and turmeric.

Example: Sunrise Smoothie – carrot, butternut squash, mango, orange juice

Lunch – featuring homemade soups, fresh salads, burgers, sandwiches, pizza, flatbreads, noodle and grain bowls, and more.

Example: Winter is Coming Salad – red cabbage and arugula blend, herbed barley, garlic confit, pickled red onion, and citrus vinaigrette

Example: The Revenant Burger – house beef blend patty, pepper jack cheese, bacon, fried egg, mélange of seasonal greens, parsnip & garlic horsey sauce

Example: Boot Stomp Flatbread – kale pesto, candied walnuts, local AZ sausage, mushrooms, mozzarella finished w/ balsamic glaze, radicchio and herbs

Dinner – featuring an eclectic collection of comfort meals and local AZ favorites, delicious sides, and seasonal vegetables

Example: Southwest Sunburst – grilled chicken breast, citrus BBQ sauce, garlic polenta cake, wilted winter greens, and seasonal grilled vegetables

Dessert – featuring favorite cakes, cookies, brownies, and more to fulfill everyone’s sweet tooth

Example: The Sour Cutie – clementine and Meyer lemon cake
