07 February 2019

It’s time for chocolate, sweets and comfort food.

Valentine’s Day is next Thursday, February 14, but better not to wait till then to plan your day. Valentine’s Day is strongly associated with chocolate, cards and flowers in many parts of the world.

For more on Valentine’s Day tune in next week.

Bad weather tends to bring on a desire for comfort foods, soup, pasta, sweets, etc. Let’s give in this week and cook some good warm, sweet (or savory) food. And get a head start on Valentine’s day, since if we wait till next week it will be too late.

MENUS

Day 1

Jamacan Shrimp Soup
Crusty Bread
Citrus Salad
Jello Cake

Jamacan Shrimp Soup
I would add a whole jalapeño instead of the scotch bonnet, and coarsely ground pepper instead of whole pepper corns, unless you like it REALLY spicy. Also be sure you don’t overcook the shrimp, maybe bring the soup to a boil after adding the coconut milk, and then add the shrimp, cook only till done and serve immediately.

Citrus Salad
Maybe add some avocado slices?

Jello Cake
An oldie but a goodie. This week is Jello week.

Day 3

Easy Slow Cooker Pot Roast
Garlic Toast
Composed Salad
Ferrero Rocher Chocolate Cups

Slow Cooker Easy Pot Roast
Experts agree the best cut of beef for a pot roast is chuck, followed by round. It needs lots of connective tissue and fat.

Composed Salad
A method more than a recipe. Use whatever fruits and vegetables you like. Do a platter or separate plates for each person.

Ferrero Rocher Chocolate Bowls

Look for really small balloons and be careful when popping them or you will break your bowls. Wow, Nutella whipped cream. Bet there are lots of uses for that!

To Make Garlic Toast: Chop or press a couple cloves of garlic (to taste). Place garlic and about 4-5 Tablespoons of butter in a small bowl and heat in the microwave until butter is melted. Set aside. Toast slices of your favorite bread. Using a silicon brush, brush toast slices with garlic butter.

Indian Style Pasta (vegan)
Fruit Salad
Molasses Bars

Indian Style Pasta (vegetarian)
To increase protein, add 1 can drained garbanzo beans.
If you are not a vegetarian and want to, add 2 cups chopped or torn meat. Jeera is cumin, I think they mean whole cumin seeds at the beginning.

Molasses Bar
From “Steve eats the food calendar”  You could do them like this, or you could add some ground ginger and cinnamon and have spicy molasses bars.

Broiled Lobster Tails

How to thaw frozen lobster tails

The night before you want to cook them remove them from their package(s). Place in a bowl large enough for them to lie in one layer. Cover the bowl and place in the lower part of your refrigerator. They should be thawed by the next afternoon.

Polenta

Avocado and Corn Salad
At this time of year use frozen corn kernels, thawed but not cooked. Thaw them in a colander  to maintain crispness. Trader Joe’s has frozen roasted corn. Others may too.

Bonus Recipes

Molten Chocolate Lava Cake
Great Techniques and Explanations

Two Ingredient Chocolate Mousse
In American Units—1 cup heavy cream, 8 oz semi-sweet chocolate. Divide cream into 1/4 cup with the chocolate and 3/4 cup whipped.

Frozen Yogurt

She uses 2 cups frozen fruit, 2 Tablespoons honey, 1/4 cup greek yogurt and 1 Tablespoon lemon juice.

* See Molten Chocolate Lava Cake for the best way to cut up chocolate.

* Tip—When melting chocolate 1) Melt slowly over hot (barely simmering) water (not boiling). 2) Remove chocolate from heat when there are still some chunks of unmelted chocolate, continue stirring until all is melted. This helps keep the chocolate from becoming un-tempered.

Be sure to keep all water, even droplets, out of melted chocolate or it may seize.
