Cool off despite the heat.

When summer’s heat has you sizzling, cool off with some tasty cold beverages, fire up the grill to keep the cooking heat outside, and put something tasty in the slow cooker. The supermarkets are cooperating with this plan by featuring good deals on fruit, meats suitable for grilling, and fresh summer vegetables.

Menus

Day 1

Shrimp Salad
Crusty French Bread
Strawberry Sorbet

Composed Salad with Shrimp
Follow general directions using:

Greens of your choice, maybe include some arugula and/or fresh basil
Pineapple chunks
Tomatoes
Sliced cucumbers
Finely sliced green onions
Cooked and cooled shrimp

Recipe: Fresh Fruit Sorbet

3-4 cups fresh fruit, cut into cubes
1/2-3/4 c. warm water 
Sweetener as required
Other flavors as desired: lime juice, zest

Place fresh fruit on a cookie sheet, and place in the freezer for at least 4 hours, until frozen solid. 

Remove from freezer, and put frozen pieces in food processor. Process until it is fine and gritty. Almost like snow. (Have you ever made snow ice cream?)

Add water - start with 1/4 cup, and add more as needed. You want it to start looking creamy. 

Eat it now if you like, but it will be very soft. Or, put it in the freezer and let it harden up for a couple of hours. 

Here are some hints:

It’s easy to remove the strawberry hull with a straw.

A pound of strawberries is about 4 cups. 

A 1 1/4" slice of watermelon, the full width, will be about 4 cups. 

Here is a video by the Domestic Geek - we adapted some of the recipes from her method. One thing she uses is a simple syrup, instead of the water and sweetener I use. The syrup does work nicely, but if you use water and a sweetner, you have more options and more control over exactly how much sweetener you use. For example, you can use brown sugar with peaches, or honey if you like. (If you use honey, you should heat it up so that it is liquid-y, because it will freeze when it touches the frozen fruit.) The amount of sugar will vary depending on the sweetness of the fruit. 

Here are some of the combinations we used:

Bottom Left: Watermelon Sorbet; Darker red: Strawberry Sorbet;
Yellow: Pina Colada Sorbet and pink: Strawberry Frozen Yogurt

Sugar (the sugar helps make the strawberries juicy)

Watermelon
Sugar or honey
Juice from half a squeezed lime

Piña Colada:
Fresh pineapple
1/2 c. Coconut milk
Sugar
Zest from a lime
Juice from the entire lime

Make Frozen Yogurt:

Brown sugar
1/2 c. Yogurt

Sugar
1/2 c. Yogurt

Either use cut up  B/S breasts or poached chicken
Most curries will benefit by a rest in the refrigerator, from an hour or two to overnight.

Dry Potato Curry
This is a pretty good recipe, but forget the asafetida (very hard to find.) For a richer dish use all or partly butter, add some sliced onions and garlic and cook on low heat until they are soft, then add spices. Usually not necessary to cook as long as they say after spices cook if your potatoes are still warm. I like to add some cooked green beans with the potatoes.

Mexican Salad

Recipe: Strawberry Parfait
Delicious for Breakfast or Dessert

Ingredients
Makes 4. You may need to experiment with your glass dishes to get the proportions you want. For desserts you may want a higher proportion of chocolate chips to granola, and for breakfast, a higher proportion of granola. Use plain yogurt or any flavor you like. Can’t be made much ahead or the granola will be mushy instead of crunchy.

12-16 oz Greek yogurt
1 1/2 cups granola
1 cup chocolate chips
2 cups cut up strawberries plus 4 whole berries for garnish. Place in bowl, add 1 Tablespoon sugar, stir and refrigerate for at least 1 hour.

For dessert parfaits
In a clear, pretty, tall glass dish, make layers of yogurt, granola, chocolate chips and strawberries. Repeat. Drip some yogurt over the top and decorate with a whole strawberry.

For breakfast parfaits
In a pint canning jar layer yogurt, granola, a few chocolate chips and strawberries. Make 2 or 3 layers, top with yogurt and a whole strawberry.

Egg Salad

At Prescott’s altitude the eggs need a little extra cooking, about 3 minutes simmering plus 10-12 minutes in the covered pan.
Other possible additions: Chopped Italian Parsley, Finely chopped fennel including some fronds, Finely chopped Kosher Dill Pickles, Finely chopped peeled and seeded cucumber.

Recipe: Light, Fruity, Spicy, Icy Beverage

In a sauce pan place:

4 cups water
1/2 cinnamon stick
4 whole cloves
4 whole allspice
6 whole cardamom seeds
juice of 1/2 navel orange
juice of 1/4 small lemon
3 slices of orange peel and 3 of lemon peel

Heat water to boiling. Reduce heat to a simmer and cook about 10 minutes. Pour through a sieve into a two quart pitcher or divide into  two 1 quart canning jars. Fill remainder of pitcher or jars with cold water. Refrigerate. Serve with ice.

If you like tea, put a tea bag in with the spices and fruit. This is not like iced tea, it is more like flavored water.
