On Sale This Week: Have a Super Party

31 January 2018

Sunday is definitely an official party day.

The Super Bowl is Sunday February 4 this year. Maybe you’re having a huge party, maybe you are having a couple of friends over, maybe you don’t care about football and you’re going to watch a movie with your kids—anyone needs party food suggestions sometime. Here are a few tasty ideas and recipes.

All the stores are having special weekends sales. Watch for the items you need.

NEWSFLASH! Sprouts has changed their website as of today. It looks lovely, but it appears that it’s still a work in progress. Some features just aren’t working as expected yet. If you want to look at their weekly ad, the best way is to download the flyer in PDF format.

Fry’s is continuing their Buy 6 Save $3 sale. Some new items are featured, but watch for the shelf tags too. Fry’s also has some 2 day only digital coupons, Fri. & Sat. only, but you must purchase $10 worth of additional items.

Safeway has a Fab 5 sale—$1 off 5 or more iparticipating items. Safeway features a 3 day sale on Fri. Sat. and Sun.

Sprouts is having a 72 hour sale, Fri. Sat. & Sun. Feb 2-4, and they have some very good sale prices that are worth taking a look at. Because of the website glitches, you may have to download the flyer to get the details.

Party Time!

If you are having a lot of people, use a couple of slow cookers. Fill one with chili, and use one to keep the cheese dip warm. Also, you can use either an electric skillet or a warming tray to keep some hot items warm.

For something substantial have a Pulled Pork Slider bar and a Serve Yourself Sausage bar. Put the pulled pork and its buns on one end, and the sausages and their buns on the other. In between put all the additions and condiments, including barbecue sauce, pickles, and whatever else you can think of.

Here are some additive ideas gleaned from online for your pulled pork sandwiches:

shredded cabbage
BBQ sauce, thinned with vinegar
Sliced onions
Teriyaki sauce

Don’t forget plenty of liquids, such as water, soda, iced tea, and any adult beverages you choose. If you are serving adult beverages, it’s a great idea to have a designated driver chosen in advance.

A selection of cookies is a good addition, easy to eat and not messy. If you want to stick with the theme, cut them out in football shapes

Menu Inspirations!

Day 1

Slow Cooker Pork Shoulder
Sautéed Kale with Bacon (use some of liquid from slow cooker)
Baked Apples

Slow Cooker Pork Shoulder

Recipe note. Depending on how big your pork shoulder is and how many people you are feeding you should get 2-3 meals. Serve freshly cooked chunks the first day, pork stew the second and pulled pork the third (or at your party!) I would put the meat in a colander to drain after it is done, then remove the bones (if present). Divide the meat and cut or pull into the amounts of each type you want, removing excess fat as you go. It is much easier to pull the pork when it is freshly cooked. Place the stew chunks and pulled meat into plastic bags and store in the fridge or freeze depending on your plans. Place the juices  in the fridge so it will be easy to remove the excess fat the next day (or two.)

Healthier Baked Apples (I use Honeycrisp.)

Day 3

Pork and Green Chili Stew (Derivative from Day 1)
Fruit Plate

Recipe: Pork and Green Chili Stew

1 large white or yellow onion, medium dice
2 Tablespoons olive oil
2 Tablespoons Flour OR 1/4 cup cooked white rice
2 small cans diced green chili
Hatch Salsa (or other green chili salsa) to taste
2-3 cups cooked pork shoulder in bite sized pieces
1 qt chicken stock (I don’t usually do this—but if you are a Costco member you should try Kirkland Organic Chicken Stock. It actually tastes like stock, no metallic or off flavors.) OR 4 cups defatted juice left from cooking Pork Shoulder.
1 cup frozen corn kernels
1 cup finely chopped red bell pepper

In a large pot, sautée onion in oil until soft.  Add flour and stir two minutes or so, until flour begins to color.

Slowly add whichever liquid you are using, stirring well at first to avoid lumps. Now add rice, if using, green chilies, salsa, pork, corn and bell pepper. bring to a simmer and cook for 10 minutes.

Garnish with sour cream. You can also serve tortilla chips on the side.

Lidia’s Italian Style Meatloaf—Really Different

Baked Potatoes

Some hints: Bake at 400 Degrees, this will take about 1 hour.  The timing depends on the size of the potato and the oven temp. If you are cooking other things in the oven you may have to reduce temp. Slightly oil skins, do not pierce at first. After 20 minutes, pierce one hole with a skewer. Continue baking till done. When done, if you squeeze (holding in a towel) the potato will feel mushy (hard to describe but a few tries will show you.)

Steamed Squash

Some hints: To keep squash from getting mushy, stop cooking before you think it is done. It will continue to cook a little in the bowl or colander. A small pat of butter gives a nice flavor and/or so does a squeeze of lemon juice. Grated Parmesan cheese also tastes good and will sometimes induce children to eat squash—it worked on me.
