About Us

Here at Prescott eNews, we think there's a lot going on in the Prescott quad-city area. And, yes, we know that bad news happens, but we also know that a lot more good news happens. So, we intend to tell lots of good news, while not ignoring the bad news. 

Although there are some online news sites for the Prescott area, there aren't many that seem to take advantage of the medium of the internet. Here at Prescott eNews, we know the difference between putting a book or a newspaper online, and using the Internet to its full potential. And we think it's time that a quality news website makes its home in Prescott, Arizona.

How Old Are You?

Ssshhhh...! Don't tell anyone, but we launched our beta site in June, 2007. So, yeah, we're the new kid on the block. Well, at least for this particular site. But, our staff has been designing websites for nearly 10 years, and are also accomplished Photoshop digital artists, writers, photographers and design instructors. What all that means is that just because this particular site is new, it doesn't mean that we don't know what we're doing.

onsale2.jpg What’s on Sale at the Grocery Store this Week? And what should I cook for dinner tonight?

On Wednesdays the new grocery store ads come out, and it’s time to sort through the sales and see where the bargains are. If you’re like me and don’t get the ads in the mail, they can be viewed on-line at the Sunday Saver . (One caution, as of right now the on-line ad for Albertson’s is only for Phoenix stores, and that ad is not in effect for the Prescott quad-city area.) I go through the store ads, make a list of things on sale, and then decide what meals to plan for the week. Prescott eNews thought it would be great to share the bargains and meal ideas with our readers. If it is popular we will turn it into a weekly column.

In my opinion, Fry’s seems to have the best deals this week; at least for those things I regularly purchase. In addition to groceries, this week they have some back-to-school items on sale. Spiral notebooks are .10 cents each, Kleenex tissues, (which many elementary schools ask students to bring in,) are .88 for 120 or 65 count boxes, and Crest toothpaste is $1.00 a tube.

Also at Safeway they have reinstated the sandwich deal. They make amazing sandwiches in their deli but they are a bit pricey. I stopped buying them when they stopped the “Buy 7 get the 8th free” deal. They are doing that again, and the sandwiches are delicious.

Meal Ideas

Here are some meal ideas for this week using the items on sale at local grocery stores.

Stuffed Bell Peppers
Mashed Potatoes
Fresh Cantaloupe
Salad

Grilled chicken breast
Mangoes
Deviled eggs
Salad

Leftover chicken can be shredded and made into chicken tacos the next night, served with avocados and pineapple. Leftover salad (without the dressing added) can be set aside for the tacos.

Recipes:

Stuffed Bell Peppers

6 Bell Peppers
1 lb. Ground beef
1 ½ cup instant rice
1 ½ cups water
1 egg
1 can (15 oz.) whole seasoned tomatoes (basil best)

Fill a large pot with water and set it to boil. Cut tops off the bell peppers and remove seeds. Drop in the boiling water for 5 minutes. Drain and cool.

Mix beef, water, rice, eggs and tomatoes. Spoon into peppers. Cover and bake at 400 degrees for one hour. This can be made the night before and cooked the next day. 

Quick Chicken Breasts

In a hurry, and want a quick dinner? Marinate chicken breasts in your favorite Italian dressing for at least 15 minutes, and then grill on the bbq or saute' them in a skillet. If you're watching your diet, consider using lo-cal Italian dressing. Serve with a fresh salad and bread.
